I thought today was Monday. That says it all, doesn't it? Long holiday weekends screw me up. It usually takes me a week to get over it. However, the three day weekend made it a short cooking week for me so I won't complain too much. :)
As always, I only post my weekly menu to encourage you to plan ahead. Planning ahead helps me stay on track. I don't type & post recipes for what I'm cooking during the week because I don't have time. However, I do list the books I'm using for the week on my menu (as long as the recipe is not something I'm whipping together from scratch).
