My weekly dinner menu for 5/23-28

For several years in a row, I posted my family's dinner menu here. I still make a menu each week.  I seem to not have a lot of "blog time" anymore...so they never make it any further than hanging on the side of my fridge.  I did manage to find some time to post it this week, though.  :)

As always, I only post my weekly menu to encourage you to plan ahead. Planning ahead helps me stay on track. I don't type & post recipes for what I'm cooking during the week because I don't have time.  However, I do list the books I'm using for the week on my menu (as long as the recipe is not something I'm whipping together from scratch). Unfortunately, this week is one of the "whipping it together" weeks. Sorry about that!

Lynn, it's SUPER easy.

cucumber
red onion
roma tomato

whole, pitted kalamata olives

feta cheese (I use fat free)

italian dressing with parmesan or romano cheese (like Ken's or Newman's Own)

I didn't list measurements since I make my batches according to how many people I'm serving. I measure as I go in order to come up with a total Point count for the whole batch. Use as many veggies as you like or need & chop them to the size you like. Add the feta & the dressing to the veggies. Mix everything together & allow to sit in the fridge at least 4 hours prior to serving. Serve chilled.
