Lowest weight in a year!

What started out as a regular, ordinary, not-so-special March 23rd ended up turning into a super fabulous day!
  1. I joined a gym today AND set a new personal record for myself by staying on the elliptical for an hour (5.3 miles!).  You can read all about the adventure & first gym workout in a year on my running blog by clicking here.
  2. I found a shiny silver hair sticking out of the top of my head. Normally, I would not find this humorous at all, but it's literally standing straight up.  It's kind of flipping everyone the bird in its own hairy way, and every time I see it I bust a gut laughing!
  3. I found a beautiful piece of ahi tuna at the market.  Looks like my dinner menu plans have changed for the better!
  4. It was finally warm enough to wear capri pants without freezing to death.
  5. During my weigh in, I hit my lowest weight in a year!  Woohooooooooo!
I've been gluten free for about 2 months now. I've noticed the bloated-ness (is that a real word???) in my tummy has gone WAY down.  That was a huge, painful (in many ways) issue for me.  So I'm not sure if my body is healing or what, but I'd love to have more weigh ins like this one.  :)

Hyla, there's a bunch of research stating people who go gluten free actually end up gaining weight due to an increase in consuming "white" flours & fewer whole grains. So far, I haven't seen that happening in what I consume. Since I have no choice BUT to go gluten free, it will be interesting to see where I am a year from now (weight wise). This is the first time in about 25 years that I haven't had constant cramps & lower abdominal pain. If going gluten free means weight gain...then so be it. But so far I have seen nothing but positive changes!

I noticed my grocery store (publix) now puts little a blue *GF* on the tags of gluten free products!

I also love to make peanut butter cookies you may be able to eat. You mix 1 cup of peanut butter with 1 cup of sugar and 1 egg. That's it! Bake at 350 for about 10 min. They are yummy and rich. Make them small so they don't fall apart to easily!
