My weekly dinner menu May 9-15

Here's my family's dinner menu for the week.  The best part?  I don't have to buy anything special from the grocery store to make any of the meals listed.  Always a plus in my book.  :)

I don't have recipes typed up for what's listed above. I'm only mentioning it because if I don't, I'll have 20 emails waiting for me went I get home asking for certain recipes. I post my family's dinner menu to remind everyone, including myself, to stay on track. Planning ahead is a HUGE help for me. Planning & writing down what I eat has kept those 80 pounds off for 8 years now. So don't knock what works. I will say, I wish I had enough time to sit around typing recipes all day! That's for sure a retirement dream of mine. [Picture it: Me. Sittiing in a cozy coffee shop with my laptop, a skinny vanilla latte in hand, typing recipes for the world to make. It's a nice dream ain't it?] :)


I did pull a couple of this week's meal ideas from the Biggest Loser Family Cookbook just like last week. We've not tried either of them, so I'd love to hear from you if you have! The book is great.

Reen, it's soooooooooooo easy to make. Throw whatever kind of chicken you have in the crockpot (frozen if you want). Dump enchilada sauce on top and cook it all day. YUM! It smells so good. You can do whatever you want with the chicken when you're done cooking it. We're having our's on salad with a little brown rice & black beans. The kids will eat their chicken with a fork. No fancy salads for them. It's a very versatile & easy to make meal for us.

Plus, I picked up 4 *free* packets of enchilada sauce seasoning mix at Kroger last week with my coupons. lol Just mix with tomato sauce for a super low Point sauce. The chicken was part of a 99 cents per pound special they were having a while back. Cheap, easy, healthy. LOVE THAT! :)

Yum! That enchilada chicken sounds good. Think I may add that to my menu next week. =)

I have made the Beef Szechuan with broccoli and it was super tasty!! My grocery didn't have a szechuan stir-fry so ours was minus that little kick.

I have some sort of hot & spicy stir fry sauce mix in packet form. So I'm going to use that instead of a ready-made sauce. I can't imagine a store in Lebanon, Ohio would have any type of specialty sauce so I didn't bother looking. lol I can't wait to move!!!!

The recipe calls for frozen broccoli, but I wonder what using fresh would be like. We're gonna find out. :)

Hey, Heather, I just did some searching for homemade enchilada sauce. Might give that a try. That way, I can control what's in it. Your chicken sounds delicious!

Reen, we have no idea, but I can speak for the whole family when I say....we're ready already! lol At this point, it doesn't matter where we end up. We know there are no jobs here, so we've come to terms with leaving. We're not really attached to Ohio since we have no family here. We were only supposed to stay for 2 years. How it morphed into 6 is beyond me. lol

There can't be that much to the sauce. What's in it other than cumin and tomato sauce? Salt? Chili powder?

Heather, the one I'm interested in making has tomato sauce, green chilies, onion, chili powder, cumin, oregano, and garlic...AND NO SALT!

I'm going to try to cut down on sodium so anything I can make instead of buying in a can is a plus. I'll send you the link for the recipe if you like. :)

I have all the Biggest Loser cookbooks and LOVE them! We've had both the baked ziti and beef/broccoli a few times and they are both excellent!

I'm gonna have to try that enchilada chicken though. We are huge enchilada fans but have banned it from the menu because I just figured there's no 'good' way around it. But dumping the sauce over frozen chicken in the crockpot?! You are a genius. :)

OK, for everyone making the crockpot enchilada stuff. We ate it last night, and remembered what we said it was missing the first few times I made it. I think adding a couple of tablespoons of masa flour into the sauce would not only thicken it, but also give it that rich, corn tortilla flavor enchiladas have (yum). I also think adding a little reduced fat cheddar or a reduced fat Mexican blend shredded cheese mix on top the last 30 minutes (just long enough to melt the cheese) would make it over the top delish. I'll try it next week and give an update.

Heather, just posted the recipe for homemade enchilada sauce. I plan on picking up ingredients this week and think I might just throw all the ingredients for the sauce together with the frozen chicken breast in the crockpot all at once and see what happens.

The cheese on top sounds like it would be perfect!
