Hot Tip: Don't throw out that baby spinach!


I eat a lot of salad.  A lot.  Every single day.  Sometimes multiple times per day.  It's a staple in my diet, to say the least.  Baby spinach is included in many of my homemade salads, but I find it goes bad rather quickly.  I do buy it in a giant container.  I realize I could buy it in smaller amounts.  However, there's really no need to buy smaller doses since I can get organic at Costco for the same price as a small bag of non-organic from the grocery store.  



I learned years ago to go ahead and toss the spinach that's going bad into a zipper seal bag & toss it into the freezer.  Yes, even if some of the leaves are a little slimy. 

Once it's frozen, crunch the bag up really tight & hard with your hands to create small pieces of spinach.  No chopping required, and you can add the spinach into pretty much any recipe you wish.  Those tiny little bits of frozen spinach are great sprinkle into an omelet.  Into your layers of lasagna.  Plop it into a food processor for a few pulses, and then add it into taco meat or meat loaf filling.  Run it through the blender & add it into various sauces or smoothies. It's even great as a pizza topping!  No need to thaw before use.  I don't.

If you're buying the kind in a plastic box....save the box. They come in handy for various household needs.  Here are a few in use down in my pantry & deep freeze.

I actually add frozen crushed up spinach to my smoothies (fruit based ones) if you use frozen strawberried with it it hardly turns green.. I drink a "green" smoothie every morning and I have notice more morning energy over the months. I also use kale, romaine lettuce (freeze when it starts to turn brown). I do have a Blendtec blender(like a Vitamix) but a regular blender may work also.

Heather, I did it this week right after reading your post, froze a bag of "not so fresh" spinach. Love it! I've been adding it to my eggs in the morning. I'm intrigued by Debb's suggestion of adding it to strawberry smoothies. Hmmm.

I'm also saving all the plastic containers that the lettuce, salad and spinach comes in along with the containers that the cherry tomatoes comes in. I plan on using them when I start havesting from our own veggie garden. I'm always giving vegetables to the neighbors and figure it would look much nicer coming in a re-useable plastic container rather than an old wrinkled up plastic bag.

Thanks for the tip. I make green monster smoothies nearly every day but often don't use up the last bit of my spinach. I'll try tossing the frozen spinach in my smoothies - it will only make it that much colder and slushier.
