Weekly dinner menu 2/2 - 3/6 (it's "eat from the freezer" week!)

I loooove weeks like this.  Weeks we can pull nearly every dinner item out of the freezer.  Dinners like this are especially helpful during extra busy weeks.  If you haven't heard me mention it 539 times during the past 10 months, I'm headed to Florida this week.  Without my family.  Just friends.  I know.  It's great.  It also means I don't have to cook dinner because I'm too busy busting my hump to get ready for the big trip! 

Saturday evening, my husband and I stood in front of the big freezer in our storage room, door wide open, glaring at the contents.  It didn't take us long to decide on what we'd be dining on Sunday through Wednesday.  Some of our favorite meals are stowed away in that freezer.  Now a few of them are on our dinner menu below.  We also decided it was time to eat the Smart Ones that have been in the freezer for over a year.  That night might be interesting. lol



After Wednesday night, Kent is on his own to feed my beautiful cherubs.  I know he can handle it.  I like being off the hook for a change.  Did I mention I'll be dining in some of my favorite Disney restaurants those nights????  I mean, you might have missed me blabbing on and on about it.  :)

Do you freeze meals you cook? If so, do you recommend any particular process for ensuring the meals taste...good...once they've been reheated?

We freeze everything. Even pasta. There are lots of "freezer meal" types of web sites out there you can check out with a quick google search. I found them to be a bunch of crap. They claim you should never do this that or the other. I disagree with them all. Anything we have leftover goes into the freezer if we don't think it will be eaten within a few days. It's like having our own littl homemade frozen dinners! :)

That's awesome...I'm going to have to look into that. It's only me making my meals every night, so having a healthy, homemade meal out of the freezer would sure speed up my evenings. With your experience, do you use those expensive freezer bags or do you just go with tupperware?

I have a Food Saver, but I'm usually too lazy to use it. lol I have really good luck with Ziplock freezer bags. I'll throw the contents of an entire casserole in a bag, lay it flat on the counter, squish the air out, and freeze it flat. That's GREAT way to save space in the freezer. Everything stacks well that way. You could do this with leftovers OR if you're making extra batches of stuff (casseroles, soup starters, meatloaf, chopped veggies from the garden, etc.). Freezing flat also makes the thawing time WAY faster. Even for stuff like hamburger meat.
