Leftovers + stuff in the freezer = a quickie

This week has been nuts.  I have no time for dilly-dallying.  None at all.  To top off this hectic week & day, I forgot to eat breakfast.  Doh!  I was so busy taking care of everyone else before leaving the house this morning, I seemed to let myself slip through the cracks.  A quick lunch was a must, and it turned out to be a keeper!  I'll for sure repeat this one another day.  It cost me 9 WWPs total, but that's not bad considering what you see below is a giant pasta / soup bowl full of delish food. Since I missed breakfast, I could afford it. I made a double batch of quinoa this week because I knew it would be a nutty week to say the least.  Having ready made things on hand keeps me from reaching for my old flame, Taco Bell.  (Shhhhh...don't tell my husband!)

{precooked quinoa (1 minute to reheat in microwave)}

OK.  So...I have some quinoa already cooked.  Now what?  To the freezer I go. To my quinoa I'll add....

{some low cal frozen veggies (4 min to cook in microwave)}


{and some grilled shrimp (13 min cook time in a skillet)}

The entire meal took 13 minutes to make.  I loaded the dish washer, switched laundry in the machines, & folded a load while I waited.  No time was wasted because I don't have time for that today.  After lunch was finished, out the door I went again.  Then back home for a conference call. Then back out the door again.  I'm tired!

Anyway, this quickie was a nice little bit of homemade mixed with premade.  Don't even get me started on how cheap all of this was to make thanks to my coupons! lol

Oh Heather! That looks delish! I have not tried quinoa but I want to. Is it good? How does it compare to couscous? I haven't tried it either. Both are on my to try list. I love adding new things to my list of "to go to foods" Thanks for sharing!

To me, it's very similar to brown rice. A little richer in flavor. Maybe a little chewier. All in a good way, though. Ooooo, and it only takes 20 minutes to cook. You can even eat it for breakfast like oatmeal (with honey & cinnamon).

I seriously cannot believe we didn't start eating it sooner than we did. I know we've had it in our diet for at least 2 years. It's an amazing food nutritionally speaking, and could totally replace rice in my life. It is, actually. I just need to use up all of the rice we still have first. lol
